I’ve been vegetarian for about 25 years but sometimes I do get menu envy towards my more carnivorous friends. So I’ve decided to try reworking some meaty classics. In this chilly weather its a day for vegetarian pretend chicken noodle soup. I avoid measuring things & rely on my taste buds on any given day. Methinks its an increased chili, ginger & garlic fest day.
Ingredients:
Quorn Chunks
Celery
Carrot
Leek
Onion
Dry medium noodles
Vegetable stock
Bay Leaves
Parsley
White Pepper
Salt
Ginger Puree
Garlic Puree
Chili Flakes
Olive Oil
1. Dice, chop and saute the vegetables in olive
2. Add quorn chunks, ginger & garlic puree
3. Once all cooked add stock, bay leaves, parsley, white pepper
3. Simmer for 15 mins
4. Add noodles and cook until soft
5. Serve
